A healthier version of a rich carrot cake, this Skinny Carrot Cake Smoothie is packed with fresh carrots, almond milk, banana and spices.
Let’s be real here: this isn’t usually your go-to health food dessert blog. There are tons out of there that cater just to that audience. Usually, in my experience, if you want dessert you better go big or go home. Desserts packed with Stevia and bizarre-sounding substitutions are not my favourite.
Having said all that, this is a healthy dessert recipe. And guess what? It’s not disgusting! (High praise, I know.)
If you’ve seen or made my previous carrot cake recipe, you’ll know I am a BIG carrot cake fan. A spice cake loaded with carrots, raisins, pineapple and coconut, layered between thick spoonfuls of real cream cheese icing is what I dream about at night. Unfortunately, I don’t think Health Canada recommends 4-6 servings of carrot cake per day, despite my unrelenting lobbying attempts.
That’s why this skinny carrot cake smoothie is so perfect. Imagine the most important parts of a carrot cake—the taste of spices, the carrots, the richness—and put it into smoothie form. This carrot cake smoothie is the bomb.
It somehow manages to be both rich and light at the same time, thanks to the healthy Greek yogurt, oodles of shredded carrots, frozen banana, almond milk and maple syrup—all delicious and nutritious foods. Adding in pinches of cinnamon, nutmeg and ginger, plus a liberal garnish of shredded carrots and coconut, round out this secretly healthy drink.
I know it’s hard, but swap out your usual carrot cake for this skinny carrot cake smoothie, at least once. Your tastebuds won’t regret it.
