Watermelon Cucumber Mint Slushies

Only the most natural, plant-based ingredients are used for these refreshing and healthy Watermelon Cucumber Mint Slushies.
  • 1.5 lbs. watermelon flesh*
  • 10-15 fresh mint leaves
  • 1 tbsp. lime juice (fresh or bottled)
  • 1 cup coconut milk or coconut water*
  • ⅓ cup chopped, skinned cucumber
  1. Chop the watermelon flesh into small squares, then spread onto a baking sheet and freeze overnight or for at least 4 hours.
  2. Once the watermelon chunks are frozen, blend with all the other ingredients until smooth, scraping down the sides as you go. (Depending on how large your watermelon chunks are, this may take a few minutes. Be patient.)
  3. Pour into glasses and serve immediately.
* Measure watermelon flesh on a scale once you've cut off all the rind.
* I used 1 cup coconut milk by stirring a can until the cream and liquid below were mixed well, then measured. But coconut water can be used to cut down on fat, though the slush will be less rich.
