Chocolate Almond Granola

Serves: 4-5 cups granola
Sweet and salty flakes of rich chocolate and sea salt crumble together to create clusters of delicious chocolate almond granola.
  • 3 cups large flake oats
  • 1 cup sliced almonds
  • ¾ cup unsweetened coconut flakes or shredded coconut
  • ½ cup cocoa powder
  • ¼ tsp. salt
  • ½ cup granulated sugar
  • ⅔ cup melted butter or coconut oil, measured in liquid form
  • ⅓ cup maple syrup
  • 1 tsp. vanilla
  • Scant 1 cup semi-sweet chocolate chips
  • Sea salt, to taste
  1. Preheat oven to 250 degrees and prepare two large baking sheets with parchment paper. In a large bowl, mix oats, almonds, coconut, cocoa, salt, and ⅓ cup sugar. In a separate bowl, stir together melted butter (or coconut oil), maple syrup, and vanilla, and set aside.
  2. Pour liquid mixture into large bowl and stir to make sure all oats are moistened.
  3. Spread granola onto prepared baking sheets. Bake both sheets in preheated oven for 50 minutes. Halfway through, switch places to ensure even baking, then stir granola gently.
  4. After 50 minutes has passed, sprinkle chocolate chips over the granola and return to oven for 5 minutes more. Remove from oven and sprinkle with remaining granulated sugar and sea salt to taste.
  5. Allow the granola to cool untouched for 1-2 hours. For granola with larger, melted chocolate chunks, pour into an airtight container after 1 hour. For more separated granola, allow to cool for at least 2 hours before storing.
