Brownie and cake texture come together in these Cake Batter Blondies, a sweet treat loaded with sprinkles and white chocolate chips.
At the time of writing this post (January 26, hello future!), I’m getting ready to pack up and move my life five blocks away to what can only be described as my dream apartment. With huge floor-to-ceiling windows, beautiful dark hardwood floors, shiny stainless steel appliances, and one of those fancy stone and marble bathrooms, I’m in heaven. Every night after work I go on a Pinterest bender, pinning apartment-themed links and urban gardening images like a woman obsessed. I can’t help it. Hey, I lived in a university dorm for three years, I deserve some classiness.
What else am I excited for? The light. Those floor-to-ceiling windows let in a thoroughly adequate amount of light, which is a food blogger’s fever dream. While we won’t be getting much direct sunlight owing to the fact that our windows/balcony looks out onto another (taller) building, we’ll get our fair share of residual light, which is fine by me. Plus, there’s the balcony. Be prepared for some outside photos soon (!!).
For now though, my photos are all taken inside. Take these cake batter blondies, for example. How cute are they? They just scream adorable with their tasty, colourful sprinkles, loads of creamy white chocolate chips, and a cake-y, brownie batter base. They’re so adorable-looking that if a kid was walking by my house when I took these photos, I’d probably run outside and ask them to hold the plate while I got a picture.
That being said, these cake batter blondies are definitely adult-friendly treats too. Don’t let the sprinkles fool you, they’re light but creamy, while being slightly under-baked and soft. Plus the beauty that is white chocolate is laced throughout the blondies. Deliciousness in a kid-friendly package.

- 1 box funfetti cake mix
- ¼ cup vegetable oil
- 1 large egg
- ⅓ cup non-dairy (or cow's) milk
- Generous ½ cup white chocolate chips
- Sprinkles, to garnish
- Preheat oven to 350 degrees. Grease an 8x8 square baking pan; set aside.
- In a large bowl, combine cake mix, vegetable oil, egg and milk. Slowly pour in milk and combine (thick batter is good). Gently fold in the white chocolate chips.
- Spread batter in the prepared pan, adding sprinkles and extra chocolate chips to the top. Bake 30 minutes, loosely covering with tin foil after 15 minutes.
- Let cool in pan for 30 minutes, then cut into squares.
